Ingredients:

1 1/2 cups Brown Rice Flour
1/2 cup ground Flax Seeds
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp ground Cinnamon
1/2 tsp salt
2 Lg Eggs
1/2 cup Coconut Sugar
1/2 cup Unsweetened Apple Sauce
1/2 tsp Vanilla Extract
1/2 cup Cold Pressed Avocado Oil
4-6 Ripe mashed Bananas
1/2 cup Coconut Cacao Nibs (I like Mum’s Original)
Directions:
1. Preheat Oven to 350 F and lightly greese a muffin pan.
2. In a Med bowl, place all dry ingredients and mix until blended together. Set aside.
3. In a Lg bowl cream together eggs and coconut sugar. Add applesauce and vanilla extract and mix.
4. Add in mashed bananas and avocado oil to the wet ingredients, mix until blended.
5. Add dry ingredients to wet, 1/3 at a time and mix until just blended.
6. Add coconut cacao nibs (or GFCF chocolate chips) and stir into mixture.
7. Spoon mixture into muffin tins and bake for 20-30 minutes.
8. Allow to cool and enjoy!
Makes 18-24 muffins
