GFCF Banana Chocolate Chip Muffins

Ingredients:

1 1/3 cup GF flour blend (your favorite homemade blend, or a premixed all   purpose GF baking blend should work well)

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/3 cup shortening (coconut oil or spectrum shortening work well)

2/3 cup sugar

2 well beaten eggs (I use EnerG egg replacer and it works great in this   recipe)

1 cup mashed banana (2 large or 3 small bananas)

1/3 cup (approximately) GFCF chocolate chips (Enjoy Life are GFCFSF and are   nice for muffins because of their small size)

 

Directions:

Preheat oven to 350 degrees.

Combine dry ingredients (first 4 ingredients) and set aside.

Cream shortening and sugar.

Add beaten eggs (or egg replacer) and mix well.

Add combined dry ingredients alternately with mashed banana until   combined.

Stir in chocolate chips.

Spoon into greased or lined muffin cups and bake for approx. 25   minutes.

 

Makes 12 muffins
