Glutenfree Wholemeal Banana, Nuts, Coconut Bread

“This is my favorite Gluten-Free  bread recipe.”

 

Ingredients:

For a small bread:

225 gr gluten-free wholemeal bread mix.

225 ml water

1 1/2 tablespoon organic coconut oil

1 big banana

1 cup crushed almonds

1/2 cup crushed sunflower seeds

1/2 cup raisins

1/2 cup fresh grated coconut

1 teaspoon cinnamon

 

Directions:

Mix the almonds/sunflower seeds and the raisins (if you have grinder, just grind them a bit)

After mix this with the banana.

Poor the flour in the blender. Add water and coconut oil and the grated   coconut and blend. After add the nut/banana/raisins mix and mix everything   well untill a smooth batter.

Poor in a bread loaf of approx. 22 x 12 cm. Cover with a wet cloth in a warm  place for about 30 min till it raises nicely.

Then put in a preheated oven of 200 C. Keep for 30 min. After 30 min. cover with cooking paper and keep for another 15 min until the bread is ready.

Grind some organic prunes with sunflower seeds (add some water) and you have a nice jam to add on top of your bread.
