Quinoa Stir Fry

Prepare Quinoa as directed on box

In large skillet add 1 tablespoon oil of choice.

Fry 1 cup of diced meat or shrimp until done.

Add:

1 cup of raw spinach

1/2 cup of raw green peas

1/2 cup of raw carrots

1/2 cup of raw broccoli chopped

1/2 cup of raw cauliflower

1 tablespoon raw chopped chives

1 tablespoon raw chopped cilantro

Stir fry for 2 minutes. Season to taste.

I use Celtic salt and garlic.  Serve with prepared Quinoa.
